Juvenile leopard gecko behavior change, help?

I have a juvenile female leopard gecko. We aren't sure how old she was when we got her but I estimate she was around 3 months old and we've had her for over 3 months now. My question is, we recently moved her into a 20L tank because she was growing out of her starter 10 gallon. She didn't have much room to move around and was always glass surfing. We put her in her new 20L about a week ago and all was well the first few days, she was still super friendly, still eating and pooping, although for the last few week she's been eating less, could that be an age thing?
Anyway, three days ago she was all of a sudden absolutely terrified of us. She stood around completely still waving her tail, so we left her alone and the next day she seemed better and more interactive. No tail wagging. Well this morning, my boyfriend said hello to her as she was peaking out from her hide and all of a sudden she BOLTED from her warm side to her cold side full speed and froze. For the next half hour I observed her from a distance and she was back to wagging her tail and being afraid again. I dunno why my previously friendly, outgoing, curious juvenile is suddenly so jumpy. Any ideas?

She sounds like she is simply adjusting to her new environment!

Give her a few days, and maybe even cover 3/4 walls with a brown paper bag, temporarily to make her feel more secure. If she doesn't calm down you may double check your temperatures and look closely around the tank to make sure nothing else is spooking her. But I think she is just settling down.

Thanks for responding. That's kind of what we were figuring. She actually ate 6-7 crickets tonight so her appetite seems to be coming back !
She was still a bit apprehensive, but we're just giving her her space and maybe we'll start introducing our hands again in a couple weeks depending on how things go.
Her new tank actually has a background and the two sides are covered with paper as well so that's already limiting her view. There is some new decor items in her tank that may be intimidating.
Otherwise her temps seems great, thermostat regulating her UTH and it stays around 88-92 degrees. No lower than 70 degree on her cool side.
